American style pancakes with Wild Soft Fruits
25g Butter (melted)
1 Tbsp Crème Fraiche
Flavourless oil such as Sunflower for frying
In a mixing bowl sift your flour and add the baking powder, bicarbonate of soda and caster sugar. In a separate bowl add your wet ingredients this is the eggs, buttermilk and melted butter. Now simply mix the wet and dry ingredients together and whisk until thoroughly combined.
Little tip now, if you can make your batter in advance do! If you are eating these pancakes for breakfast, get up and mix the batter and then store in the fridge for at least half an hour (really benefits if you do it the night before) this will help them puff up during cooking.
Now heat a large frying pan with a little cooking oil and using a large serving spoon blob two or three (depending on the size of your frying pan) large portions of the mix into the pan. Make sure that you leave space between the pancakes as they will spread!
Now you should have two or three little pancakes cooking, now its time to add our fruit, simply spoon it on top if the little pancakes so that it gets absorbed onto the pancakes surface, we want them to nestle on top but sink in slightly so when we turn them they are hold in place and don’t start to roll out around the pan. After 1 or 2 minutes you’ll see that the pancake is cooking and the top will begin to bubble and puff up. When the bottom is cooked you can turn it and allow the top to cook for a minute. Remove the cooked pancakes and place them on a baking tray in a gently warm oven and repeat the cooking process until you run out of mixture and Wild Fruit!
I like to sweeten a little Crème Fraiche with honey and then drizzle it over the pancakes with liberally sprinkled uncooked fruits, this just adds an extra twist of luxury that lets you know you are eating something quite special.
